When bees cluster in winter, they generate heat to keep the hive warm. Without insulation, a lot of that heat escapes quickly, forcing the bee colony to use more energy (i.e. more of their honey stores) to stay warm.
Insulation slows down heat loss — somewhat like how the walls of a thermos slow the transfer of heat — allowing bees to conserve energy and deplete their stores more slowly.

Especially in temperate climates where days/night or fall/spring temperatures fluctuate, insulation helps buffer these swings. This gives bees time to respond and adapt without sudden thermal stress.
